One of our signature coffees, The Local is a Fair Trade and Certified Organic single-origin coffee from the Sidamo province of Ethiopia, considered the birthplace of coffee. Harvested from October to December, the cup profile of Ethiopian coffee is unique to this region, and is known for its bright, tropical acidity and floral aromas. We roast this coffee to a medium-dark profile to extract flavors of jasmine flower and sencha green tea, while notes of mandarin orange and grapefruit brighten and balance each sip.

The Local

Rwanda Love, a Fair Trade and Certified Organic coffee, is produced by the Hingakawa Women’s Association, a women-led faction of the Abakundakawa Cooperative. Abakundakawa means “People Who Love Coffee” in Kinyarwanda, a sentiment we absolutely share. The cup character of coffee from this region is sweet and spicy, with notes of vanilla and black currant acidity. For those who want a brighter morning pick-me-up, Rwanda Love is roasted to a medium profile to bring forward notes of sweet lime and hops, an undercurrent of juniper, and balanced with a smooth honey finish. This cup surprises and shines, and the passion in its production is evident from the first sip.

Dogwood is a blend of coffees from Ethiopia, Brazil, and Columbia- crafted by Atlas Coffee Importers and commonly known as the Rosebud Blend. Notes of rich nougat can be found from the Brazilian beans, matched with flavors of cocoa and molasses from Columbia, and rounded out by a hint of citrus from Ethiopia. Dogwood is roasted to a dark profile to enhance the flavors of caramel and dark chocolate found in the blend, balanced with a berry-forward acidity when enjoyed on its own. Served in-house as our signature espresso, Dogwood is best paired with frothed milk to showcase its natural sweetness.

Dogwood Espresso

Our newest, Certified Organic signature coffee, we created the Esperanza blend as a reflection of our belief that great coffee is healing. That is why 10% of all profits are directed to the Edmonds Food Bank, to help families in times of uncertainty. Blending coffees from Honduras, Mexico, and Rwanda, we roast Esperanza to a medium profile to bring out notes of hazelnut, cocoa, and a bright, red berry acidity, for a cup that’s as complex as it is smooth. Enjoyed in-house as our signature cold brew, this exceptionally delicious coffee is like the first day of sun after a long, wet, Northwest winter- full of hope.

Esperanza Blend

Swiss Water Process uses the elements of water, temperature, and time to create a complex and distinctive decaf coffee. Starting with small batches, they remove the caffeine in a gentle 100% chemical-free process. Our roasting process caters to the sensitivity of these naturally decaffeinated beans. We use lower temperature intervals to extend the overall roasting period, allowing us to slowly develop a more unique flavor profile. Dayton St. is roasted to a dark profile to extract flavors of graham cracker, golden raisin, and honey, making it the perfect blend for enjoying alone or with milk to showcase its sweet, earthy notes, creamy body, and smooth finish.
